A rare Saké that uses deep sea water extracted from Noto seaweed, Chikuha Ika Junmai is a true embodiment of Kazuma Saké Brewery’s coastal heritage. Crafted with a mixture of Noto Gohyakumangoku and Noto Ishikawa Mon rice, both locally grown, along with a very special kind of yeast extracted from Noto seaweed, this award-winning Saké was specially created to complement the taste of squid. Possessing a sweet and plump aroma reminiscent of maple syrup and honey, the taste of this Junmai can morph drastically depending on the temperature. At room temperature, the sweetness and light acidity perfectly complements the sweetness of squid sashimi, but when cold, it matches fruity olive oil of squid carpaccio or the savoury taste of charred squid.
