Titled Kuheiji both their sake and wine have an elegant acidity as a common characteristic. They believe that both rice and grapes cultivated to strict standards and tended with greatest care will yield the best quality result in both sake and wine.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe current owner of the brewery is the 15th generation, Kuheiji Kuno, and the brewery has been growing their own rice in Hyogo prefecture since 2010. This sake has been created to appeal to both a veteran sake drinker and a novice alike. It brings with it flavour components of sweetness, umami, acidity, bitterness and astringency which arise from the fermentation of rice and are called the “go mi” or five flavours of rice in Japanese.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe initial impression is floral with notes of apricot and lemon, with coriander seed and an edge of white pepper. The palate feels fresh and sharp with a backbone of acidity which opens to an elegant flavour with good balance. There is a rim of bitterness on the sake which is pleasant and cleverly balances the other elements of the sake. This sake like most of the range is well suited to long term ageing and in the bottle the freshness is preserved by just one pasteurisation. The Omachi rice reveals its power and its broad, ample flavour profile. It has a strong, persistent nature of growth in the rice fields, and this seems to translate to its assertive flavour in the bottle. It has flavours of koji derived on the palate and nose, as mushroom and chestnut, mixed with flavours of undergrowth and botanicals which open to ripe fruit. It has volume and less tension than its Yamada Nishiki equivalent but alludes to the classical features of Junmai Daiginjo – smoothness and structure.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eAromatically it has gentle nuances of plant, grass and grains which open to a variety \u003cbr\u003eof botanical scents. On the palate there is a definite fresh fruitiness with the bitterness of chewed citrus peel and rice based umami. It can appear a little zesty and lively on opening and with time this settles, and a clear image of ripe banana and mellow tropical fruit predominate. It is pasteurised once in the bottle to stabilise and ideally should be stored in refrigerated conditions to preserve condition.
